Ideal for a quick break, Sencha is the most commonly drunk form of Japanese green tea. Using freshly boiled water helps keep the aroma rich and full when you brew the tea.

Ingredients and equipment

  1. Teapot
  2. Teacup(s)
  3. Tea leaves 1 to 1.5 tablespoons  [4 to 6 g] (for about 4/5 cup [180 to 200 ml] water)

2. Discard the hot water from the teapot and add the tea leaves.

3. Pour the hot water from the teacup into the teapot, place the lid on the pot, and allow the tea leaves to brew for 1 to 2 minutes. Transferring the hot water from the teacup lowers the temperature to the ideal range (160°F for high-grade sencha, and 175-200°F for medium-grade).

4. Pour the tea into each cup little by little, alternating between cups several times for uniform strength of flavor. Pour out the tea to the last drop.
